Mango-Lime Agua Fresca

March 10, 2015

The sun is nervous

As a kite

That can’t quite keep

It’s own string tight.

Some days are fair,

And some are raw.

The timid earth

Decides to thaw.

Shy budlets peep

From twigs on trees.

And robins join

The chickadees

Pale crocuses

Poke through the ground

Like noses come

To sniff around.

The mud smells happy

On our shoes.

We still wear mittens

Which we lose.

Mango Lime Agua Fresca Hola Jalapeno

March has been full of surprises this week. We’ve had our first day at the park, our first long walk, and our first bicycle ride of the year. I know winter will rear it’s ugly head at least one more time before all is said and done but in the mean time I’ll be making fat pitchers of tropical agua fresca and perusing the seed catalog.

Mango-Lime Agua Fresca Hola Jalapeno

Louisa walked to school by herself for the first time yesterday. We live a block from the school and normally we all walk together but Hiro was still asleep and you don’t wake a sleeping bear. She breezed down the front steps with such authority, only turning to wave at me three or four times. And I cried, of course I cried, but I don’t think she saw me.

Spring is meant for new beginnings, I guess they are beginning now.

Mango Lime Agua Fresca

Mango-Lime Agua Fresca

Yield: 8 Servings

This type of agua fresca is called Limon Rallado or with the rind. You add the limes whole—the bright green rind gives it a fragrant and unique flavor. The rind of the lime will get bitter with time, so this drink is best made right before you serve it. You can find my recipe for straight-up Lime Agua Fresca using the same method here

  • 1 very ripe mango, peeled, pitted and cubed
  • 1 lime, cut into eighths
  • 1/2 cup granulated sugar
  • 3 cups water
  • 1 cup ice

  1. Place all the ingredients in a blender. Blend until mango is pureed and lime is very finely chopped. Strain through a fine mesh sieve into a pitcher and serve over ice.
