Figuring out the 10 Best Recipes of the year is always my favorite post and there is quite the round-up this year!
This past year has been one of the most eventful of our lives, an enormous move took us from North Dakota to Southern California in July and we are still equal parts thrilled, grateful beyond belief, and a little scared of how to navigate our new home (moving is hard!).
The ¡Hola! Jalapeño kitchen has pumped out a lot of great recipes this year. 2016 was the year I embraced my slow cooker (I went from the beginning of the year owning exactly zero slow cookers to now owning two) and it seems you guys are with me, three out of ten of my most popular recipes of the year come straight out of the slow cooker. Also, banana desserts. Banana desserts were very popular this year.
I’m super excited to see what 2017 has in store for all of us. There will be lots more parties in 2017 (!!) The first one is a cozy winter dinner party coming up in January that you are going to LOVE! And of course, the 2nd annual Margarita Week will be happening for Cinco de Mayo! The Ramos Family is traveling to Italy in June so this blog may go from ¡Hola! Jalapeño to ¡Ciao! Peperoncino. But first I’d like to know, what would you like to see from ¡Hola! Jalapeño in the next year? What kind of recipes do you want more of? More slow cooker or should we move on to something else? More healthy, easy, make you look ten years younger recipes? Leave me a comment and let me know!
Before we move forward let’s take a look back at out 10 Best Recipes from this year!
Luscious beef cooked low and slow with adobo paste, onions, and jalapeños until meltingly tender. Perfect for tacos, quesadillas, or rice bowls. Dairy free!
Mexican beans at it’s best: meaty pinto beans cooked with beer, bacon, chiles, and spices all in the slow cooker. Gluten-free!
Who doesn’t love amazingly tender, ricotta-rich banana bread?
7. Beer Battered Fish Tacos with Radish Pico de Gallo
Beer-battered crispy fish tacos topped with a crunchy radish pico de gallo, avocado slices, and a squeeze of lime. Dairy free!
6. Bananas Foster Upside Down Cake
This cake is no joke: espresso-walnut sour cream cake topped with caramelized bananas and dripping in rum-laced dulce de leche.
5. One-Pot Cheesy Chicken and Rice
My award-winning chicken and rice recipe (no really, I won an award for it this year).
4. Spicy Lime Jalapeño Chicken Soup
A spicy jalapeño and shredded chicken soup bright with lime juice and spices like ground cumin, coriander, and smoked paprika. Chopped kale and cannellini beans make it filling without being too heavy.
3. Bacon-Wrapped Hot Dogs with Avocado Pickles
Mexican-style hot dogs wrapped in bacon with crunchy pickled avocado wedges—yes, you can pickle avocados.
2. Vegan Mexican Chocolate Popsicles
This one came from my dear friend Meg of This Mess is Ours, an easy, super creamy chocolate popsicle with a touch of cinnamon and spice.
If you haven’t made this recipe, you will. It is the most delicious slow cooker Mexican chicken soup recipe that comes together in 15 minutes, flavored with chiles, cilantro, mint, and marjoram.
