Mango-Lime Agua Fresca

This type of agua fresca is called Limon Rallado or with the rind. You add the limes whole—the bright green rind gives it a fragrant and unique flavor. The rind of the lime will get bitter with time, so this drink is best made right before you serve it. You can find my recipe for straight-up Lime Agua Fresca using the same method here


  • 1 very ripe mango, peeled, pitted and cubed
  • 1 lime, cut into eighths
  • 1/2 cup granulated sugar
  • 3 cups water
  • 1 cup ice


  1. Place all the ingredients in a blender. Blend until mango is pureed and lime is very finely chopped. Strain through a fine mesh sieve into a pitcher and serve over ice.
