Creamy vegan avocado dressing made with ripe avocado, fresh lime and lemon juice, garlic, cumin, and olive oil. It’s bright, silky, dairy-free, and perfect for salads, tacos, grain bowls, or dipping.

  1. Add 1 ripe avocado, 1 garlic clove, 2 tablespoons lime juice, 2 tablespoons lemon juice, 1 teaspoon ground cumin, 1 teaspoon kosher salt, 1/4 teaspoon ground black pepper, 1 tablespoon olive oil, and 3 tablespoons water to a food processor.
  2. Process until completely smooth, scraping down the sides of the food processor as needed. Add up to 1 additional tablespoon water, a little at a time, until the dressing reaches a pourable consistency. Taste and add more salt or lime juice as needed.

Notes

  1. Emulsification: For an extra glossy and ultra-smooth texture, stream the olive oil in slowly while the processor is running.
  2. Ripeness check: Choose an avocado that yields gently to light pressure without feeling overly squishy. If it feels firm, it won't blend smoothly.
  3. Spicy twist: Add half a jalapeño or serrano pepper (seeds removed for mild heat) for a spicy kick that pairs exceptionally well with tacos.
  4. Herbal boost: Blend in 1/2 cup of fresh cilantro leaves, parsley, or chives for extra freshness and a deeper green color.
