Healthy Taco Salad Recipe

A lighter take on Taco Salad with seasoned ground turkey, black beans, loads of fresh veggies, tortilla chips (obviously), and a sweet citrus dressing that makes a satisfying and gluten-free main course salad. Ready in 30 minutes!

  1. Brown meat. Heat oil in a large frying pan over medium-high heat. Add turkey, paprkia, salt, onion powder, oregano, black pepper, and chili powder. Cook, stirring frequently to break up the meat until turkey is cooked through, about 6 minutes. Remove from heat.
  2. Arrange. Place lettuce in the bottom of a large serving bowl. Arrange cooked turkey, black beans, tortilla chips, avocado, bell pepper, radish, queso fresco, tomatoes, microgreens, cilantro and onion slices on top.
  3. Dress and toss. Drizzle dressing on top and toss until everything is well coated. Taste and add more dressing if you'd like and season with salt and pepper if needed.
  4. Serve. Divide between four plates and eat!
