Raspberry-Prickly Pear Agua Fresca Recipe

A vibrant sweet tart of a drink made with fresh prickly pears, frozen raspberries, and lime. Along with being economical, frozen raspberries add an extra bit of chill to the drink (not to mention they're a bit more flavorful this time of year) but if you'd prefer to use fresh they would work well too. Agua can be made and kept cold for up to 4 days. Keep covered and make sure you stir before serving.

Ingredients
  

  • 5 ripe prickly pears peeled and diced
  • 3 cups cold water
  • 4 limes zested and juiced
  • 2 cups frozen raspberries
  • 1 cup granulated sugar

Method
 

  1. Combine all ingredients in a blender. You may need to do this in batches depending on the size of your blender.
  2. Blend on high until smooth. Strain and serve over ice.
