Spiked Mango Margarita Salsa Recipe

This recipe for Margarita Salsa is simple and easy and can be made in under 10 minutes. It's sweet and tart with a splash of tequila.

Ingredients
  

  • 1 ripe mango peeled, pitted, and diced small
  • 2 small ripe tomatoes, diced small (about 1 cup diced)
  • 3 scallions minced
  • 1 serrano or jalapeno chile thinly sliced
  • 1/4 cup minced Italian parsley
  • 2 limes juiced
  • 2 tablespoons blanco tequila
  • 1 teaspoon kosher salt

Method
 

  1. Mix together: Combine all the ingredients in a medium bowl. Stir well and taste on a chip to see if it needs more salt or lime juice. 
  2. Make ahead: This salsa is best eaten the day you make it but if you have any leftover it will keep covered in the refrigerator for a day or so. Give it a good stir before you dig in!
