Method
- Cut 2 limes into sixths and put in a blender, peel and all, with the 1/2 cup sugar and 3 cups ice water.
- Blend 30 seconds, just until limes are broken up.
- Strain through a fine mesh sieve into a pitcher. Do not push down on the pulp, just let it naturally pour through.
- Serve immediately over ice with a lime wheel for garnish if you'd like. The agua fresca is best the day it is made. It will get bitter the longer it sits.

Notes
- Straining: Strain gently and avoid pressing the pulp; this prevents extra bitterness.
- Limes: Use fresh, juicy limes with smooth, thin skin for the best flavor and less bitterness.
- Variations: For a fun twist, add a few mint leaves or swap some of the water for sparkling water right before serving.
- Enjoy immediately! This drink is best served fresh, as it can become bitter if stored for more than a few hours.
