Whole Lime Agua Fresca
A truly refreshing drink that’s bursting with bold, honest flavor, let me introduce you to my favorite summertime secret: whole lime agua fresca.
Ingredients
- 2 large limes, washed well, plus an extra lime for garnish if you'd like
- 1/2 cup granulated sugar
- 3 cups ice water
Instructions
- Cut 2 limes into sixths and put in a blender, peel and all, with the 1/2 cup sugar and 3 cups ice water.
- Blend 30 seconds, just until limes are broken up.
- Strain through a fine mesh sieve into a pitcher. Do not push down on the pulp, just let it naturally pour through.
- Serve immediately over ice with a lime wheel for garnish if you'd like. The agua fresca is best the day it is made. It will get bitter the longer it sits.

- Straining: Strain gently and avoid pressing the pulp; this prevents extra bitterness.
- Limes: Use fresh, juicy limes with smooth, thin skin for the best flavor and less bitterness.

I like it, but it’s bitter enough that the kids won’t drink it. Next time I’m gonna trim out the pith, and maybe simmer the peels in sugar water for a while.
Good idea about the pith. The drink tends to get bitter the longer it sits so make sure you are drinking it right away.
