I planted three cucumber plants in my garden this summer and let’s just say, I’m now wealthy in cucumbers. I’ve been using them to make Mexican tuna salad with cucumbers, aguachile, and cucumber watermelon salads but my favorite quick and easy cucumber recipe is to blend them into agua fresca.

What Is Agua Fresca?
Agua fresca literally means “fresh water,” but in Mexico and across the United States, it’s so much more than that. These non-alcoholic drinks are made by blending fresh fruit (or in this case vegetables), water, and a touch of sweetness, then straining and serving over ice. From pink chia seed lemonade to agua de limón and horchata drinks, there’s a whole world of aguas frescas to explore—each one more refreshing than the last.

Here’s what you’ll need to make this cucumber agua fresca recipe:
- Fresh cucumbers (English or Persian): These give the agua fresca its signature bright green color and crisp, cooling flavor. Leave the skin on for extra color.
- Fresh lime juice: Adds a burst of tartness and balances the sweetness.
- Sugar or maple syrup: Just enough to bring out the flavor—feel free to swap for your favorite alternative sweeteners like agave or honey.
- Cold water: The base that keeps this drink light and refreshing.
- Pinch of salt: Optional, but it makes all the flavors pop.
- Cucumber slices & lime wheels (for garnish): Not just pretty—these infuse even more flavor as you sip.

For the best cucumber lime agua fresca, use a fine mesh strainer (like we do with our tamarind agua fresca) to remove any pulp after blending. This gives you that classic, smooth texture you get from street vendors and makes every sip taste like summer.
How To Make Cucumber Lime Agua Fresca
Start by peeling your cucumbers if the skin is thick or bitter, or leave it on for extra color and nutrients, then cut the cucumbers into large chunks. Add them to your blender with the fresh lime juice, sugar or maple syrup, pinch of salt, and water. Blend until completely smooth—the mixture should be bright green and full of life.


Next, pour the blended mixture through a fine mesh strainer into a large pitcher, pressing with a rubber spatula to extract as much liquid as possible. Taste and adjust the sweetness or lime juice to your liking—remember, everyone’s idea of the perfect drink is a little different!

Fill your glasses with ice, pour over the cucumber agua fresca, and garnish with cucumber slices and lime wheels. This drink is best enjoyed immediately, but you can store it in the fridge for 2-3 days if you somehow have leftovers.

Cucumber Lime Agua Fresca
This bright green, ultra-refreshing cucumber lime agua fresca is a staple at street vendors and all of our family gatherings—it’s about to become your new favorite flavor too!
Ingredients
- 3 pounds English or Persian cucumbers, about 3 large English cucumbers, chopped
- 1/2 cup fresh-squeezed lime juice (about 4 limes)
- 3/4 cup granulated sugar
- 4 cups water
- Pinch of salt
- Cucumber and lime wheels, for garnish
Instructions
- Add 3 pounds chopped cucumbers, 1/2 cup lime juice, 3/4 cup sugar (or maple syrup), pinch of salt, and 4 cups water to a blender. Blend until smooth.
- Strain through a fine mesh strainer into a large pitcher, pressing to extract all the liquid.
- Taste and adjust sweetness or lime as needed.
- Serve over ice, garnished with cucumber and lime. Enjoy immediately or refrigerate for up to 2-3 days.
Notes
- Blending: If 4 cups of water doesn't fit in your blender, use less water to blend and add additional water after straining.
- Pitcher: You can strain directly into a pitcher although I find it easier to strain into a large container first and then transfer into a pitcher.
- Serving Ideas: Turn it into a refreshing cocktail by adding a splash of gin, vodka, or tequila.
- Sweetener Swaps: You can substitute the granulated sugar with an equal amount of maple syrup, agave nectar, or honey. Adjust to taste.
