  • Missing my dad today. 💔 We don’t get to see each other that often. He lives 1500 miles away in Des Moines. Even so, not knowing when we can safely see each other again is hard, ya know?   • Ripe mango and citrus salsa 🥭 I found the most gorgeously ripe Manila mangoes at the Latin market last week. Armando loves mangoes so I bought quite a few. I made this really delicious salsa with the last 2 this morning. I peeled and chopped the mangoes and then tossed them with chopped white onion, jalapeño, cilantro from the garden and salt. I peeled and chopped an orange from our tree and squeezed a Meyer lemon over the top because we are out of limes after too many margaritas over the weekend 🍹. This salsa is really good with grilled fish and even beef and obviously chips too.   • 🌺 Jamaica Margarita 🌺 A springtime cocktail that I’m making this weekend to celebrate my excellent mothering🤣 Here’s how to make it: Rub a lime wedge around the outside of a cocktail glass, dip in a salt-sugar mixture. Fill cocktail shaker with ice. Squeeze 1 1/2 limes, 2oz tequila, 1 ounce Cointreau, 3oz Agua de Jamaica. Shake and pour into glass.
