How was your 4th friends? Ours was super chill. Armando’s mom and nephew were here from Dallas and I think they were so relieved not to be in 100°F+ weather, that sitting outside enjoying the cool ocean breeze was good enough.
During all this downtime I was thinking how this summer needs a cocktail. Specifically this cocktail which has nothing to do with a Cuba Libre and everything to do with the free-flowing style of summer—especially when cold, fizzy, tequila-laced cocktails are involved.
A few weeks back I posted this pale pink homemade rhubarb lemonade recipe and while I still had some in the fridge I decide to mix up some summery cocktails. Rhubarb and ginger, tequila and lime, lemon and bubbles, all these flavors just scream summer.
Here’s How We Make a Tequila Libre
First of all, we’re going to have to make the Rhubarb Lemonade, which sounds like a pain in the ass, but really is not because guess what?! This lemonade requires, zero lemon squeezing! If you really, really don’t want to make it however, you can use store-bought lemonade.
Once you’ve got the lemonade then you shake it up in a cocktail shaker with some ice, tequila, and more fresh-squeezed lime juice. Pour it into a glass and top with fizzy ginger beer.
You can easily make a whole pitcher while you’re at it. Just add 1 cup of tequila to the pitcher of lemonade, the juice of 2 limes, and 12 ounces of ginger beer. Add ice, stir, and taste. If it is too strong for your liking, add more ginger beer, or if it needs a bit more tart, squeeze in another lime. Adjust it to your tastes, you know what you like. This should be enough for 6-8 drinks.
This is basically summer in a glass, don’t you agree?

Tequila Libre
The Tequila Libre cocktail embraces the free-flowing spirit of summer with tequila, ginger beer, and homemade pink rhubarb lemonade.
Ingredients
- 4 ounces Pink Rhubarb Lemonade (see link in post) or store-bought pink lemonade
- 2 ounces silver tequila
- 1 ounce lime juice
- 2 ounces ginger beer
- lime slices, for serving
Instructions
- Combine lemonade, tequila, and lime juice in a cocktail shaker filled with ice. Shake vigorously until well chilled.
- Pour into a tall glass and top with ginger beer. Add a few lime slices, stir, and serve.
