These sheet pan chicken nachos have everything I want in a pan of nachos: crunchy tortilla chips, saucy shredded chicken, refried beans, lots of melty cheese, and enough fresh toppings to keep every bite interesting. And because we’re starting with store-bought rotisserie chicken, the whole thing comes together in about 20 minutes.
Which is excellent news because nachos are usually something I want immediately.

The Secret to Better Sheet Pan Nachos
The trick is simple: layer everything. I build these sheet pan nachos in two layers so the saucy chicken, refried beans, cheddar, and Monterey Jack make it onto more than just the top chips.
The chicken gets tossed with salsa for easy flavor, and the two cheeses give you plenty of melty goodness.
Then I finish the whole thing with cotija or queso fresco, guacamole, red onion, pickled jalapeños, and sour cream.

- Tortilla Chips – Use a bag of sturdy tortilla chips because flimsy chips and loaded nachos are not a good match.
- Refried Beans – Adds creamy texture and makes every layer more satisfying.
- Real California Milk Cheddar and Monterey Jack Cheese – Give you the best mix of sharp flavor and serious meltiness; a Mexican cheese blend works in a pinch.
Favorite Toppings
- Real California Milk Cotija or Queso Fresco – Adds a salty punch while queso fresco is softer and milder, and both are usually easy to find near the Mexican cheeses.
- Red Onion – Adds crunch and a sharp bite that cuts through all that cheese; green onions are a good backup.
- Guacamole – brings cool, creamy richness to the whole situation, and store-bought is absolutely fine when you want to keep things easy.

How To Make Sheet Pan Chicken Nachos
1. Make the Saucy Shredded Chicken. Place the shredded chicken in a large bowl and toss with the salsa until every piece is coated in a saucy chicken mixture.

2. Prep the Baking Sheet. Preheat the oven to 400°F. Line a large baking sheet with parchment paper for easy cleanup and to keep the bottom layer of chips from sticking.
3. Build the First Layer. Spread half of the tortilla chips over the baking sheet in a single layer. Scatter half of the beans, half of the shredded cheese, and half of the shredded chicken mixture evenly over the chips.

4. Add a Second Layer. Add the remaining chips in an even layer, then top with the rest of the beans, chicken mixture and the remaining shredded cheese.

5. Bake Until the Cheese Melts. Bake for 10-12 minutes, until the cheese melts completely and turns bubbly at the edges.

6. Top and Serve. Pull the pan from the oven and immediately scatter on your favorite nacho toppings: cotija, red onion, dollops of guacamole, and definitely dollops of sour cream. Serve the entire platter right away, while the chips are still crispy tortilla chips and the cheese is at its meltiest.
What Cheese Is Best for Nachos?
I like a mix of cheddar cheese and Monterey Jack cheese. Cheddar brings the flavor and Monterey Jack melts beautifully. A Mexican cheese blend works too, and pre-shredded cheeses are totally fine if that’s what you have.
Finish with cotija cheese or queso fresco for a little extra salty flavor.
