Switch Up Las Posadas This Year
If you’ve never attended La Posada, it is a special part of Christmas in Mexico. For nine nights leading up to Christmas, friends and family gather at different homes to celebrate. There is always lots of food and drinks like Mexican desserts and mezcal cocktails but I love the idea of gifting this Island Squeeze cocktail-in-a-box one night and then serving it the next for something fun and different.
Even though this isn’t a traditional drink for Las Posadas, the fragrant botanicals of Roku Gin combined with the delicious homemade matcha syrup will set a festive mood and the pale green cocktail is completely perfect for the season.

To Make the Honey-Matcha Syrup
- 1 cup honey
- 2 teaspoons matcha powder
- 1 cup hot water
For the Island Squeeze:
- 3 parts Roku Gin
- 1 part Triple Sec
- 1 part lemon juice
- 1 part Honey-Matcha Syrup
- Mint and Orange Wheel, for garnish
For the Syrup:
Combine all syrup ingredients and whisk until fully incorporated. Chill.
For the Island Squeeze:
Combine all the ingredients for the cocktail in a shaker over ice. Shake vigorously for 10-15 seconds. Strain into a rocks glass over fresh ice. Garnish with a mint sprig and orange wheel.
Syrup will keep covered in the refrigerator for up to 1 month.
