Lately, I can’t get over the size of the cabbage at the farmer’s market—one head of cabbage and you’re set for taco nights, quick lunches, and maybe even a little something for the next day. It’s a good thing, honestly, because cabbage is one of those ingredients that just keeps giving.
By the way, cabbage is having such a moment right now. Both the NY Times and Food and Wine just posted cabbage recipe roundups in the last couple weeks and I felt it important to jump on the bandwagon with Mexican recipes because cabbage plays such an important role in Mexican cuisine.
