I don’t need to convince you of the beauty of guacamole. I’m sure you already have your favorite way to make it. I do too.
I’m pretty much a guacamole purist. Ripe avocados, onion, cilantro, jalapeños, fresh lime juice, and salt and absolutely under no circumstance—tomatoes.
But occasionally, I like to spice things up—literally.

With this guacamole dip we are swapping fresh jalapeños for their smoked variety—chipotle peppers in adobo and also adding a bit of ground cumin. Give it a try! I think you’ll love the results.
What’s In This Smoky Guacamole?

Simple guacamole needs very few ingredients—which is part of it’s charm! Just make sure everything you use is the best quality for ultra-tasty results.
- Avocados—choose ripe ones from the market or at least wait to make this until they are perfectly ripe.
- Red onion
- Cilantro
- Chipotle peppers in adobo. I did a taste test of canned chipotles, check out my recommendations before buying.
- Lime juice. Authentic guacamole uses fresh-squeezed lime juice not lemon juice.
- Ground cumin
- Kosher salt
How To Make The Best Guacamole Recipe

Making guacamole is very personal. Everyone has their preferred amount of heat (do you add one jalapeño or four)? What about texture? Do you like it super smooth or ultra chunky?
If you’ve never been completely satisfied with your guacamole, here’s what it might be missing.
- Mince the onion. The first step is to mince the red onion very small. Toss those in a large mixing bowl along with the minced cilantro, and chipotle peppers in adobo.
- Use ripe avocados. Make sure the avocados you are using are ripe but not mushy. When you press on them, they should give a little, but not feel soft.
- To mash or not? Cut the avocados in half and remove the pit. When they are ripe you should be able to squeeze the avocado gently and the pit will fall out. If you want smooth guacamole just scoop the flesh out of the skin with a spoon. If you want it chunky, peel the avocados and cut into bite-sized pieces. Add the avocado to the bowl.
- Add lime juice and salt. Squeeze the limes over the bowl, add the salt and cumin. If you want it smooth, mash with a potato masher. Chunky? Stir gently with a spoon.
- Taste test. Scoop up some guacamole with a chip. Does it taste incredible? If not, you need to add more lime juice, salt, and/or chipotles. Add another squeeze of lime juice and taste again. Then add a generous pinch of salt and taste. Add another minced chipotle and continue tasting. Keep going until it is perfect.
- Serve!
How To Keep It From Turning Brown

The age old dilemma of guacamole is how to keep it from oxidizing or turning brown. Exposure to oxygen is what turns avocados brown and so we need to limit the amount of oxygen touching the surface.
Place a piece of plastic wrap directly over the surface of the guacamole. Press it down so it is touching as much of the guacamole as possible. Then cover the top of the bowl with another piece of plastic wrap.
This should keep your guacamole nice and green for at least a day in the refrigerator.
I have been trying to limit my plastic use so I use this compostable plastic wrap called Compostic. It is more expensive than traditional plastic wrap, but so much better for the planet. It decomposes faster than an orange peel!

Ingredients
- 1/4 large red onion, minced
- 1/2 cup chopped cilantro leaves and tender stems
- 1-3 chipotle peppers in adobo, minced (use as many as you'd like depending on your heat preference
- 3 medium ripe avocados, pitted
- 2 limes, juiced, plus more to taste
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon ground cumin
Instructions
- Combine ingredients. Add onion, cilantro, and chipotles to a large bowl.
- Add avocado. If you want your guacamole creamy, simply scoop the avocado flesh out of the skin with a large spoon into the bowl. If you want it chunky, peel the avocado and chop, then add to the bowl.
- Add remaining ingredients. Squeeze lime juice over everything and add cumin and salt. If you want creamy guacamole, mash it all together with a potato masher or fork. If you want it chunky, gently stir it all together.
- Taste. Scoop some guacamole up with a tortilla chip and taste. Add more lime juice, salt, and/or chipotle pepper if needed.
