There’s something so summery about fresh pineapple salsa. The juicy, sweet pineapple, sharp red onion and jalapeños, the tang of lime juice. But you want to know what takes it up another notch? Grilling the pineapple first.
If you already have the grill fired up to make grilled chicken or other grilled meats, I highly recommend throwing some pineapple on at the same time. Grilling the pineapple intensifies the flavor, caramelizes the outside and adds a bit of char which only makes it more irresistible.

Pineapple Salsa Ingredients

Don’t you just love a short ingredients list? Me too! Here’s what we’ll need:
- Ripe pineapple. I don’t recommend canned pineapple slices.
- Red onion or substitute thinly sliced scallions
- Serrano or jalapeno pepper. Manage the spice level by using serrano chiles if you want it spicier and jalapeños if you don’t. If you don’t want it spicy at all, use just 1 jalapeño and make sure to remove all the seeds.
- Fresh cilantro
- Limes
- Kosher salt
How To Make Pineapple Salsa
Not only is this salsa easy, it is super healthy too. Low in calories and fat with lots of nutrition from fresh ingredients.
step one
Grill pineapple. If you already have the grill going for other dishes, great! If not, heat the grill to medium heat or heat a grill pan on the stove to medium-high heat. Meanwhile, with a sharp knife, remove the skin and trim the ends of the pineapple and cut in half vertically.
Place the pineapple on the grill. You don’t need to oil it or oil the grates. Let cook undisturbed until it is charred on one side, then turn and repeat until all the sides have nice char marks. This should take about 15 minutes total. Remove and let cool.

Chop ingredients. Mince red onion, jalapeno (or serranos if you are using). Place in a medium bowl. Once pineapple is cool, remove core and chop small. Add to the bowl, combine with the minced cilantro, lime juice, and season with 1/2 teaspoon kosher salt. Stir well and taste again to see if it needs more salt or lime juice.

step three
Serve or store! Serve as an appetizer or with grilled salmon or on chicken tacos. Any leftovers can be stored in an airtight container in the refrigerator for up to 5 days.

Variations

I like to let the smokiness of this grilled pineapple salsa shine through with just a few ingredients but if you want you can add:
- 1 Red bell pepper, cored, seeded, and minced
- A can of drained and rinsed black beans. If you add the black beans it becomes more of an appetizer than a salsa you would put on tacos.
*One thing I do not recommend is to puree the ingredients in a food processor or blender. Pineapple has an enzyme that gets viscous and gummy when pureed and will make this gooey and unappetizing.

- Grill pineapple. Heat grill to medium or a grill pan to medium-high. Once hot, place pinapple half on the grill and let cook, undisturbed, until it is charred on one side. Flip and continue to cook until all sides have grill marks, about 15 minutes. Let cool.
- Combine. Once pineapple is cool, remove core and chop into small dice. Add minced red onion, chiles, and cilantro. Squeeze one lime half over the salsa and season with salt. Stir and taste. Add more lime juice or salt if needed.
- Serve or store. Serve immediatley or keep in the refrigerator for up to 5 days.
