I’ve shared a few different quesadilla recipes over the years, but every now and then it’s nice to come back to the classic. No unexpected ingredients or fancy fillings—just juicy chicken, sweet peppers and onions, lots of melty cheese, and crispy golden tortillas.
It’s proof that simple recipes are often the ones we make again and again because they just work.

Ingredient Notes

- Boneless Skinless Chicken Breasts – You can also use boneless skinless chicken thighs, rotisserie chicken, or any cooked chicken you have on hand.
- Olive Oil- I always use California Ranch Extra Virgin Olive Oil because it has a fresh flavor that works really well here.
- Lime Juice – Brightens the chicken while helping keep it tender.
- Chili Powder – Adds warm Mexican flavor without making the quesadillas overly spicy.
- Garlic Powder & Onion Powder – Add savory depth to the seasoned chicken.
- Black Pepper & Salt – Simple seasonings that enhance all the other flavors. If you prefer, you can replace all of the spices with your favorite homemade taco seasoning.
- White Onion – I like white onion here because it softens beautifully and becomes slightly sweet as it cooks, but a red onion works just as well.
- Bell Peppers – Colorful bell peppers add sweetness, texture, and freshness.
- Green Onion – Adds color and a mild onion flavor right before serving.
- Black Beans – Optional, but black beans add extra protein and make the quesadillas even more filling.
- Chihuahua Cheese – The most authentic choice for Mexican quesadillas, thanks to its creamy texture and incredible melt or use Monterey Jack, cheddar, pepper jack, or Oaxaca cheese like I did in my squash blossom quesadilla recipe.
- Flour Tortillas – Large flour tortillas become crisp while holding plenty of filling.
- Corn Tortillas – For a gluten-free option. Since they’re smaller, place the filling between a bottom tortilla and another tortilla on top instead of folding.
How To Make Chicken Quesadillas
Step 1: Season and Cook the Chicken. Place the bite-sized pieces of chicken into a bowl with olive oil, chili powder, garlic powder, onion powder, black pepper, salt, and lime juice.

Heat oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for about 7 to 8 minutes, turning once, until the tender chicken is beautifully golden brown and fully cooked. Transfer to a bowl and set aside.

Step 2: Cook the Vegetables. Using the same skillet, heat another tablespoon of oil over medium heat. Add the sliced white onion (or red onion) and bell peppers. Cook for about 4 to 5 minutes until softened and lightly caramelized.

Stir in the green onion and black beans(if using) and the cooked chicken to create the flavorful chicken mixture.

Step 3: Assemble the Quesadillas. Heat a clean large skillet or frying pan over medium heat and lightly coat it with cooking spray or a small amount of oil.
Lay one of the flour tortillas flat in the pan. Sprinkle cheese over half of the tortilla, then spoon the chicken mixture onto the cheese. Finish with another sprinkle of cheese before folding the tortilla closed.

The extra cheese helps hold everything together as the cheese melts.
Step 4: Cook Until Crispy. Cook the quesadilla on the first side for 3-4 minutes, then carefully flip and cook another 3-4 minutes, until both sides are golden brown and the cheese melts completely.

Step 5. Slice and Serve. Transfer the cooked quesadillas to a cutting board and let rest for a few minutes then use a pizza cutter or sharp knife to cut each into 2-3 wedges. Serve immediately with sour cream, salsa, guacamole and/or hot sauce.

Just like we talked about with my roasted squash quesadilla, the secret is patience. Cook over medium heat so the cheese has time to melt before flipping. Freshly shredded cheese melts much better than pre-shredded.
Common Mistakes to Avoid

- Overstuffing the tortillas. Too much filling makes them difficult to flip and more likely to fall apart.
- Cooking over heat that’s too high. Stick with medium heat so the tortilla turns golden and crisp while the cheese has time to melt.
- Flipping too early. Wait until the cheese has melted enough to hold the filling together before turning.
- Using cold cheese. Let freshly shredded cheese sit at room temperature for a few minutes so it melts more evenly.
- Slicing too soon. Let the quesadilla rest for 1–2 minutes before cutting so the cheese sets slightly and stays inside.
Easy Variations
One of my favorite things about this chicken quesadilla recipe is how easy it is to make your own. Here are a few delicious ways to switch things up:
- Turn up the heat: Add sliced jalapeños or your favorite hot sauce for a spicy kick.
- Add mushrooms: Sauté sliced mushrooms with the onions and bell peppers for an earthy flavor.

Storage & Leftovers
If you happen to have leftovers, let the cooked quesadillas cool completely before storing them in an airtight container in the refrigerator for up to 3 days.
To reheat, skip the microwave if you can. A hot skillet over medium heat is the best way to bring back that crispy tortilla and gooey cheese. You can also reheat them in a 350°F oven or air fryer until warmed through.

Ingredients
Seasoned Chicken
- 1½ pounds boneless skinless chicken thighs (or breasts), cut into bite-sized pieces
- 3 tablespoons olive oil, or any neutral-flavored oil, divided
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1 teaspoon kosher salt
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon freshly ground black pepper
Filling
- ½ white onion, thinly sliced (or red onion)
- 1 red, yellow or orange bell pepper, cored, seeded, and thinly sliced
- 1 tablespoon olive oil or vegetable oil
- 2 green onions, sliced
- ½ cup canned black beans, drained and rinsed (optional)
Quesadillas
- 4 large flour tortillas (10 to 12-inch)
- 2 cups shredded cheese, use a mix of Chihuahua cheese and Monterey Jack, or substitute cheddar, pepper jack, or Mexican cheese blend
- Cooking spray or a small amount of vegetable oil
For Serving
- Sour cream
- Classic pico de gallo or favorite salsa
- Hot sauce
- Avocado salsa or sliced avocado
Instructions
- Season and Cook the Chicken. Toss the 1 1/2 pounds bite-sized chicken pieces with 1 tablespoon of the olive oil, 1 teaspoon chili powder, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon black pepper, 1 teaspoon salt, and 2 tablespoons lime juice. Heat the remaining 2 tablespoons of oil a large skillet over medium-high heat. Add the chicken in a single layer and cook 5–6 minutes, turning once, until golden brown and cooked through. Transfer to a bowl and set aside.
- Sauté the Vegetables. In the same skillet over medium heat, add 1 tablespoon of oil. Add the 1/2 sliced onion and 1 sliced bell pepper and cook 4–5 minutes until softened and lightly caramelized. Remove from heat and add the cooked chicken, 2 sliced green onions, and 1/2 cup drained black beans (if using).
- Assemble the Quesadillas. Heat a clean large skillet or frying pan over medium heat and lightly coat with cooking spray or a small amount of oil. Place one flour tortilla flat in the skillet. Spread a generous layer of cheese over half of the tortilla, then add a scoop of the chicken mixture on top of the cheese. Fold the empty side of the tortilla over the filling to close.
- Cook Until Golden. Cook 3–4 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese melts completely. Repeat with remaining tortillas, wiping the skillet between batches if needed.
- Slice and Serve. Transfer the cooked quesadillas to a cutting board and use a pizza cutter or sharp knife to cut each into 3 wedges. Serve immediately with sour cream, salsa, and hot sauce.
Notes
- Chicken swap: Rotisserie chicken or leftover chicken works great — skip Steps 1 and simply toss the meat with the seasonings in the pan before assembling.
- Tortilla choice: Flour tortillas give the crispiest result. Corn tortillas offer a gluten-free option but are smaller and more delicate — use two per quesadilla as a top and bottom tortilla.
- Cheese: Chihuahua cheese is the most authentic choice for gooey, melty cheese pull. Monterey Jack is the best substitute; pepper jack adds heat.
