If you’ve been reading this blog for any length of time you know I love vegetarian Mexican recipes. I mean so obsessed, I wrote a whole cookbook about it.
Vegetables are not only more fun to cook but a great way to pack lots of vitamins and nutrients into your diet. Mexican vegetables like red bell pepper, cauliflower, tomatillos, and nopales all add so much texture and flavor to our cooking.
From Mexican roasted vegetables to sweet potato tacos dorados, Mexican-inspired vegetarian recipes are simply what I want to eat on any given day. They are full of spice and keep things exciting! I hope you find a new favorite in this list.
