I’ve said it before and I’ll say it again, I could easily live on soup alone. They’re comforting, filling, and easily adapt to whatever needs to be used in the fridge.
Mexican soups especially top the charts for the one-two punch of hearty and tasty. There are so many phenomenal Mexican soup recipes that it was hard to narrow it down (and I didn’t narrow it down that much to be honest).
Soups also win top prize for make ahead meals. I make at least one pot a week to have on hand for lunch or easily warm up for dinner on busy nights.

30 Mexican Soups For Winter
1. Creamy Crock Pot Chicken Tortilla Soup
A classic chicken tortilla soup with a swirl of sour cream added at the end for a rich yet brothy soup. Put all the ingredients together in a slow cooker before heading out to work and come home to the house smelling amazing! Top with avocado, thinly sliced jalapeños and tortilla chips right before serving.
2. Pork Pozole Rojo
Authentic pozole recipe made with classic ingredients like dried chiles, hominy, and tender pieces of pork shoulder. This is our go-to pozole recipe when we want the real-deal. Serve with thinly sliced cabbage, minced onion, and dried oregano for sprinkling on top. Don’t forget the homemade corn tortillas!
3. Slow Cooker Caldo de Pollo
When you are feeling under the weather, this soup tastes like heaven. The recipe uses a whole chicken which makes the most incredible broth, and is seasoned with mint and marjoram. Did I mention it’s super easy? Made in the slow cooker!
4. The Easiest Creamy Mexican Vegetable Soup
A super simple dish made with only 5 ingredients (including frozen vegetables) in 20 minutes! I like to use the mixed bag of frozen root vegetables like squash, potatoes, or sweet potatoes. It is an easy, healthy weeknight meal. Serve with homemade flour tortillas for an extra-special treat.
5. Sopa de Fideo
This soup is like a big bowl of comfort and so simple to make with thin fideo pasta in a silky tomato broth. You will be surprised how easy, quick and delicious this soup is. It’s one of Mexico’s most classic soup recipes made with tomatoes, noodles, garlic, and broth. Loved by kids and adults alike. Check out the video to see how easy it is to make.
6. Creamy Lentil Soup with Salsa Macha
An absolutely delicious Mexican lentil soup made with lentils, onion, garlic, and a kick of spice from a salsa macha swirled into each bowl. This absolutely delicious lentil soup is quick, easy, and utterly comforting. Lentils and tomatoes are the backbone in a toasted chile broth. A drizzle of cream makes an indulgent finish. Substitute coconut milk to make this a vegan lentil soup.
7. Spicy Slow Cooker Black Bean Soup
This is one of those super easy recipes where you add the black beans and all the other ingredients in the slow cooker, put the lid on and walk away.
8. Sopa de Albóndigas
This albondigas soup recipe is a family favorite with chipotle-spiced meatballs in a rich tomato broth. Add cooked rice to each bowl or swap the rice for potato. A handful of baby spinach at the end adds great flavor and texture.

Top with a spoonful of Cilantro Chimichurri—the vinegar and spice add a bright note to the otherwise silky, meaty broth.

A classic Mexican chicken soup made quickly with chicken breast, dried chiles, chicken broth, and spices in an Instant Pot. A hearty, comforting weeknight dinner. Top with tortilla strips, avocado, and crumbled cotija cheese.
17. Chicken Chili with White Beans
Healthy Chicken Chili with white beans and hominy—brothy, bright, and packed with veggies, this lighter chili is sure to satisfy every devout chili lover.
18. Vegetable Soup with Cilantro Pesto Croutons
